Weekend Cooking: Coconut Lime Tofu Noodle Soup

When I spied this recipe for Coconut Lime Chicken Noodle soup, I thought it sounded good. But I thought I would use tofu instead of chicken. My thought was right. It was delicious.
 Tips on the recipe:
I didn't know which Chinese noodles to use so I bought these:
They were delicious. I think you could spagetti and it would fine too. I think these cook quickly. 
My only complaint about this recipe is I wish there would have been more. I will definitely double the recipe next time. Tai and I each had two bowls but I think I could have had a third bowl easily.

  1. Okay, this sounds awesome. Thanks for making a tofu version -- I can have chicken and share the tofu version with my vegetarian niece. Yum.

  3. This looks SO SO good! I love the combo of coconut and lime -- so Carribean and Southeast Asian at the same time! I'm trying it definitely :)

  6. I'm glad to hear that the tofu version is yummy. I'm a vegetarian, hubby is a big carnivore, so this is one I could make both ways and we'd both be happy :)

  8. This sounds truly yummy! but the color reminds me of that part on Bridget Jones where she turned the soup blue!! LOL!! not that yours is blue but it is yellow! :D
