Weekend Cooking: Roasted Cabbage with Quick Balsamic Reduction

When  cabbage was super cheap for St Patrick's day, I admit-I overbought. We like cabbage, right? When I saw this recipe on Oven Love, I knew at least one head of cabbage would be drenched in balsamic.
It's very easy. Toss the cabbage with oil, salt and pepper. Roast in the over for 40 minutes total, flip at the halfway mark. Natalie went with cabbage rounds but I went with wedges for easy turning. About 15 minutes before the cabbage is cooked, add 1/2 cup of balsamic vinegar and and 1 tablespoon to a saucepan and cook over medium heat until it thickens. How thick is up to you. The sauce is so yummy. It really pairs well with the cabbage. I'll be making this one again.

  2. I only recently learned to eat cabbage. I am not a great fan of balsamic myself, but I do love the fact that the recipes is so easy :) I must try this with soy sauce :)

  3. Oh, cool! I will store this one in my memory banks for when I need to get veggies on the table with dinner! That was smart of you to get extra cabbage at St. Patrick's Day because it lasts forever :)

  4. I love roasted veggies and I love cabbage. I also like balsamic vinegar. This is a natural for me. Will give a try this week while it's cool enough to keep the oven on.

  9. I have the strangest children. Would you believe BOTH girls love cabbage? It's one of the few vegetables they're both crazy about. Me.. I like it raw and simply shredded into my salad. The girls like it when I shred it and briefly saute it with shredded onion in a skillet until crisp tender. Once it goes past crisp-tender to mushy, no one likes it. I'm thinking roasting wedges could be crisp tender, too. Must try this!

  11. That sounds delicious!! I always forget about cabbage but think my favorite way to eat it is cooked with bacon. Probably not very healthy, though. ;) I missed Weekend Cooking this weekend for Bloggiesta but hope to be back next week!
