Weekend Cooking: Sausage and Potato Soup


I love a good soup. When I spied this one Bacon, Butter, Cheese & Garlic, I made it immediately. I was a little skeptical of the Jimmy Dean breakfast sausage but I always try to make recipes the way they are written at least the first time. My doubts were quickly erased when I tasted the soup and just melted. 


This soup (recipe link) was a huge hit with my family. Everyone wanted seconds. I did double the amount of spinach in the soup and reduced the potatoes a little but kept everything else the same. As my coworker says everything is better with half and half!

It reminded me a little of the soup my friend, Jen, makes for Easter only a little spicier. I can't wait to make this one again.

  2. You are seriously making me hungry! Also, I feel awful for not cooking as much as I should be, but unless I cook on the weekends, I'm too tired to do it during the week now with my job becoming full time. But this makes me want to get back into cooking!
