I've done bacon wrapped chicken a few times before (A whole chicken wrapped in Bacon and Sweet Bacon Chicken Bites) but I liked this one because it was stuffed and wrapped.

Here's mine:I only had thicker cut bacon on hand. Thinner cut would be easier to work with. It was difficult to wrap the thicker bacon around the chicken. For the stuffing, I used marinated artichokes, black olives, sun dried tomatoes, garlic, and fresh rosemary. It was very easy to make. Everyone determined this one a keeper.
