Pin It And Do It: Cashew Crusted Mahi Mahi and Green Bean Almondine

I bought a big bag of mahi mahi last time I was at Costco. Don't be surprised if you see more mahi mahi recipes for the Pin It and Do It Challenge. Both of these recipes were keepers.

I'm a huge fan of coconut butter so I was thrilled to use it in the mahi mahi recipe. Both recipes were pretty quick so it was a great weeknight meal.

Pin It and Do It Challenge: Spinach Artichoke Mini Quiches

I pinned these Spinach Artichoke Mini Quiches because they are diary and gluten free. I figured they would be a great breakfast/brunch option and they were.

I had fresh spinach so I used that instead of frozen spinach. I loved artichokes. I would definitely make this again. I did miss the cheese so I might add it next time. But loved the mini quiche idea.

Miso Glazed Eggplant

I have to thank Uwajimaya (my local asian grocery store) for posting about Miss Mochi's Adventures on their facebook page. It's no secret that I'm trying to learn to cook more Japanese food so I found Miss Mochi's full of recipes I couldn't wait to try.
One of our favorite dishes at Japanese restaurants is the miso glazed eggplant. I've also seen it called broiled eggplant with miso paste. It's absolutely delicious. I attempted to make it once years ago and failed. I hadn't thought about making it again until I saw it on Miss Mochi's blog.
It turned out perfectly. I'm super excited that we can have this at home any time we want.
I followed her recipe exactly and it was easy. I'll be making again and again.

Weekend Cooking: Breaded Mushrooms

I pinned this breaded mushroom based on the picture. Who wouldn't want to make them? They look delicious.

But after reading the recipe and the comments, I realized that I needed to make some adjustments.
As you can see not as pretty as the pinned one.

Breaded Mushrooms
(adapted from Notecook)

8 oz mushroom, cleaned and de-steamed
3 Tbs grated Parmesan cheese
4 Tbs panko bread crumbs
1 tsp garlic powder
1/2 tsp black pepper
1/2 tsp red pepper
1 egg

Heat oven to 450. Mix cheese, bread crumbs, garlic powder, black pepper, red pepper together. Dip mushrooms in egg, then dip cheese/bread crumb mix. Place breaded mushrooms on a baking sheet, lined with foil and sprayed with oil. Bake for 6-8 minutes, flip mushrooms, then bake for another 6-8 minutes.

Sauteed Chard & Steak Dinner Plus A Review of Full Circle

I mentioned that we joined Full Circle, a local organic delivery company. Each week we get a box of produce delivered to our door. We've been absolutely delighted with the quality of their products. One of the best things is trying new to us vegetables and fruit. In last week's box, there was a bunch of chard. I've never made chard before so I did a little internet snooping and found this recipe.
It was delicious. I can't wait to make it again. And that lovely steak next to it? Also from Full Circle. I'm telling you they're awesome. I love that I can add meat, dairy products, and fresh pasta to my order.

Weekend Cooking: Roasted Cabbage with Quick Balsamic Reduction

When  cabbage was super cheap for St Patrick's day, I admit-I overbought. We like cabbage, right? When I saw this recipe on Oven Love, I knew at least one head of cabbage would be drenched in balsamic.
It's very easy. Toss the cabbage with oil, salt and pepper. Roast in the over for 40 minutes total, flip at the halfway mark. Natalie went with cabbage rounds but I went with wedges for easy turning. About 15 minutes before the cabbage is cooked, add 1/2 cup of balsamic vinegar and and 1 tablespoon to a saucepan and cook over medium heat until it thickens. How thick is up to you. The sauce is so yummy. It really pairs well with the cabbage. I'll be making this one again.
