Korean Beef Bowls #pinitdoit

I'm always looking for good dairy free meals that are quick. This wasn't the prettiest of meals but it was a winner.

Here's the terrible photo:
Meat over rice. Yum.

I didn't have green onions but I'll add them next time. I served some steamed veggies on the side and it was a meal. I think it took about 30 minutes to make the whole meal but still a good quick meal.

Peanut Butter Muffins #pinitdoit

I was so excited when Trish announced she was bringing back Pit It and Do It. I've been lax on doing my pins so I'm looking forward to getting a bunch of pins done this next month. The first pin is something I pinned recently: Peanut Butter Muffins.

 I'm looking for something more interesting for breakfast than frozen waffles and these fit the bill. Pretty easy to make. I also skipped the additional peanuts on the top and added chocolate chips to the batter.
Very peanut buttery. If you skipped the chocolate chips, a dollop of jam when you eat them would also be delicious. New favorite breakfast!

Stuffed Eggplant with Ground Beef #pinitdoit


I picked some eggplants at Costco as a lark. I honestly had no plan for them. Worst case scenario, I'd make baba ganoush or eggplant parm. While surfing Pinterest, I came across a stuffed eggplant dish. It was diary and gluten free. I decided to give it a whirl.

It took a little longer than my regular evening meals so I saved it for a weekend night. I followed the recipe pretty closely. I even had some almond meal and parsley so I was able to do the garnish! Everyone loved it. I guess I'll pick up eggplants again from Costco.

Pumpkin Muffins #pinitdoit

I don't have much to say about these pumpkin muffins other than you should make them right now. They were so moist and delicious. I had trouble not eating the whole dozen at one. Yummers.

Weekend Cooking: Bacon Wrapped Chicken Breasts #pinitdoit


I've done bacon wrapped chicken a few times before (A whole chicken wrapped in Bacon and Sweet Bacon Chicken Bites) but I liked this one because it was stuffed and wrapped.

I only had thicker cut bacon on hand. Thinner cut would be easier to work with. It was difficult to wrap the thicker bacon around the chicken. For the stuffing, I used marinated artichokes, black olives, sun dried tomatoes, garlic, and fresh rosemary. It was very easy to make. Everyone determined this one a keeper.

Weekend Cooking: Pumpkin Poppers #pinitdoit

I love pumpkin. I look forward all year to fall so I can make pumpkin bread, pumpkin cookies, and pumpkin pie. I broke out my cans of pumpkin last weekend and made these pumpkin poppers. I wanted something for the Readathon that I could snack on. I ate most of them at breakfast!

I used whole white flour rather than just plain white. But pumpkin covered with butter and sugar, who wouldn't like that? I didn't wait too long to cover them with butter and sugar. Next time I would wait til the poppers were fully cooled first. I think they'd be more like donut holes at that point.

Pin It And Do It: Cashew Crusted Mahi Mahi and Green Bean Almondine

I bought a big bag of mahi mahi last time I was at Costco. Don't be surprised if you see more mahi mahi recipes for the Pin It and Do It Challenge. Both of these recipes were keepers.

I'm a huge fan of coconut butter so I was thrilled to use it in the mahi mahi recipe. Both recipes were pretty quick so it was a great weeknight meal.

Weekend Cooking: Mustardy Kale Salad With Sweet Potatoes #pinitdoit

Ah, Pin It And Do It. So glad Trish was able to run this challenge this month. I love Pin It and Do it. I have lots of pins planned so let's see how many I can get to!
First, we've been eating a lot of kale. I like kale. This is has been my go to kale salad for months. But when I spotted this kale salad with sweet potatoes I was intrigued. It was full of flavors I liked-apples, almonds, mustard. I skipped the cheese but it was a hit. Everyone enjoyed this salad.

Weekend Cooking: Spicy Honey Roasted Almonds #pinitdoit

More almonds! After making the Sriracha and Brown Sugar Almonds, I still had half a bag of plain almonds. I knew I had more almond recipes lurking on my food Pinterest board. After a little digging, I found these Spicy Honey Roasted Almonds. Again, the combo of sweet, spicy, and salty was a winner.

Incredibly tasty and a huge hit. I'm going to have to remember both this almond recipes around the holidays. They would be great to take to potlucks or have out as snacks.

Pin It and Do It: Oatmeal Chocolate Chip Muffins

I decided to give myself a break from granola and yogurt for breakfast. I wanted to make some sort of healthy muffin or breakfast cookie but I didn't want to go to the store. I wanted to make something with what I had on hand. No blueberry muffins or pecan breakfast cookies since I had no blueberries or pecans. Finally I stumbled on these Oatmeal Chocolate Chip Muffins. Oatmeal is healthy right?

Yum! Ok, I made 2 substitutions. I used coconut milk (I had some for another recipe) and I used sour cream in place of applesauce. Yeah, I made them even healthier! Anyhow, they are delicious and I would make them again.

Pin It And Do It: Basil-Peach Chicken

I pinned this Basil-Peach Chicken recipe nearly a year ago. I had some basil decaying in my fridge and Full Circle delivered peaches this week so now was the perfect time to make this recipe.

Mine looks a little sad compared to the original one. And while that chicken looks pretty pink, I guarantee that it was fully cooked! Again, I overcooked the chicken slightly, but it tasted yummy with the sauce. I would make this again. Next time I'll try it with chicken thighs.

Weekend Cooking: Nutella times two #pinitdoit

Tai loves Nutella so a weekend that includes two Nutella dishes was a great weekend for him.
Tai's work was having a potluck the following week. I wanted to make these 3 ingredient Nutella cookies but wanted to make a test batch. While I pulling out the Nutella to make the cookies, I started thinking about breakfast. I wanted to make french toast, but could I incorporate the Nutella in the french toast. Pinterest to the rescue.
So my first pin is the Nutella french toast:

I had some leftover rolls from Ezell's (local fried chicken place) which worked perfectly. The french toast was very decadent and delicious. I will make these again.

I took my test batch to my work and people raved about them. No one believed me that that there were only 3 ingredients. I made them small since they were very rich.

Pin It and Do It: Ranch House Crock Pot Pork Chops

I pinned the recipe for Ranch House Crock Pot Pork Chops over a year ago. We don't eat a ton of pork so I never got around to making them. But I was at the grocery store buying bacon when I noticed the pork chops were on special. So I of course picked some up. I was trying to think how to make them when I remembered seeing this recipe. And since I just picked up a new crock pot (my old one died), dinner was born.

Mine:
I did sear the pork chops before I put them in the crockpot. You don't have to. I just had a hot pan with bacon grease so I decided to give it a shot. Also I served mine over fauxtatoes (mashed cauliflower). Delicious. Everyone enjoyed it. I will make this again.

Pin It And Do It: Sriracha and Brown Sugar Almonds

One of my coworkers brings almonds as a snack to work. I was telling her that I saw some pins about flavored almonds. She said she hadn't seen them so I told her I'd send her a few links. While looking through my pins, I notice how easy these recipes are. And since almonds are good snacks, I decided to make these Sriracha and Brown Sugar Almonds. I figured if there were slightly spicy I wouldn't eat as many.

So easy. I made 1.5 lbs worth and doubled the sauce. I even gave some to Tai to take to work. I bet this batch will be gone in a few days.

Weekend Cooking: Chicken Breasts With Mushrooms and Cream #pinitdoit

We're getting to the end of May (where has the time gone) and I'm just doing my first Pin It and Do It item! Time certainly has gotten away from me!
So today's dish is a pin that I pinned 22 weeks ago. I love looking at my older pins because I tend to only took at my newer ones for dinner inspirations. This chicken breast with mushroom and cream dish looked interesting especially since the recipe stated the sauce was so delicious.

I overcooked the chicken a little. We all enjoyed the sauce. I'll definitely make this one again and try not to overcook the chicken!

Weekend Cooking: Beef Massaman Curry

I pinned this beef Massaman curry because we like Massaman curry and anytime I can use my crockpot  is a good day. I screwed up the recipe a little but it still came it out delicious.

I didn't have any tapioca when I started making it. I bought some tapioca and added it at the end so the tapioca didn't blend in well. But it didn't affect the taste at all. I would make this again.

Pin It And Do It: Baked Eggs with Broccoli, Mushrooms and Cheese

I pinned this baked eggs recipe in my ongoing quest for yummy breakfast ideas. I had some left over broccoli and mushroom from my Full Circle box. Plus I had some ramekins that I got from Marta as wedding gifts. I can't believe it took me this long to use them.

It was a delicious breakfast. You could change up the veggies. Spinach, onions, and peppers would also be good in this too. Also could change up the cheeses. I will be making this one again.

Weekend Cooking: Pumpkin-Nutella Loaf

I pinned this pumpkin-Nutella loaf a while ago. I bought a box of canned pumpkin in October thinking I would make all sorts of pumpkin dishes. This is the first thing I've made using that canned pumpkin. Only 23 more cans to go!
I made this loaf to take to a party last night. It was a huge hit. Not only did it get gobbled up, but plenty of people asked me for the recipe.

I followed her recipe exactly except I added 1/2 tsp of ginger and 1/2 tsp of cardamon. I thought the additional spice would enhance the flavor. I was right, it did. Tai's asked me to make this again so it might be my go to dessert for the holidays.

Pin It and Do It Challenge: Balsamic Roast Beef

I pulled out my crockpot for this one. In this busy holiday season, it's great to come home and have a meal waiting rather than having to worry about dinner for half the day.

I served it over mashed potatoes and made a gravy out of the sauce. I highly recommend doing that. The flavor of the meat was good but the gravy made it extra special. I would make this again. It was the perfect comfort food meal.
