I followed her recipe exactly and they came out delicious. Tai liked them too. I wanted to serve them with honey and sea salt just like Poppy but I couldn't find the honey. But they were yummy all the same. I'll make these again.

Eggplant Fries
Ashley, Marta and I all like the eggplant fries at Poppy. We order 2 plates when we go. They are delicious. So when I saw this recipe on Hungry Mouse I knew I had to try it. 
I followed her recipe exactly and they came out delicious. Tai liked them too. I wanted to serve them with honey and sea salt just like Poppy but I couldn't find the honey. But they were yummy all the same. I'll make these again.

And by the way - the Japanese Maple WAS in the 3rd pic - but it's still really small, so it's a little hard to see.
