Weekend Cooking: Low Carb Meals In Minutes

I picked up Low Carb Meals in Minutes to find more quick weeknight meals. As you know I don't follow the low carb diet. But it's incredibly easy for me to think of rice, pasta, or potato based dishes. I like looking at low carb cookbooks because they give me different things to try.
I tried the Smothered Steak with Caramelized Onions and Hearts of Palm Salad.
The steak was delicious. The onions took a little longer than the recipe said. I'd never had hearts of palm but the salad was easy and good. Overall it was yummy weeknight meal.

  2. That does sound amazing! I've also started looking in the low-carb direction for ideas even though people who follow low-carb diets would laugh at my normal consumption.

  4. Linda, I am a carb addict I think! Pasta and potatoes are my favorites! My hubby is trying to lose weight though and he doesn't want carbs:( This would be a good cookbook for me to have. When he worked 3-11 the other night I splurged and fried potatoes and ate nothing but them for my dinner!

  8. I've been looking at more low-carb choices too, especially for evening meals. I feel so much better in the mornings if I don't eat carbs late!

  9. I know what you mean about different cookbooks inspiring different choices, regardless of whether you follow a diet. I like to look through vegetarian cookbooks for ideas. Thanks for sharing!
